“First off, I adore Hatch Green Chiles. I had read remarks from y’all when I was ordering my fresh chiles that this year’s crop was a little milder than usual and recommended customers to select one heat level higher than usual. I usually purchase medium so I ordered Hot. I eagerly received my peppers and roasted them under the broiler within 48 hrs. While the flavor was good, there was very very little “heat” so I even left the seeds in. Still I would rate the heat level as mild and the flavor did not punch through the other flavors. I regret to have to say I was disappointed. I am a loyal customer and will continue to order, however, I am thinking I might need to order extra hot in order to get medium heat?
