“I was very disappointed with the chilies that I received I ordered the medium but when I received them they were like mild there was no there was not even a touch of heat to them when I reached out to the company I was told that they had a rainy season this year and sometime the rain does something to the Chili's I don't know I was not a happy camper at all this was the first time that I ordered them and I don't think that I'll order them again”

“(NOTE: I stupidly let my first shipment rot by sitting out for a week. DON'T let these sit around!) These Hatch chiles are just so beautifully good. It's the easiest thing to roast 'em in the oven broiler and peel them afterward. I then sectioned them off into small Ziploc bags that I keep in my freezer, and I just run a bag under the sink when inspiration strikes. These are rated at a "medium" but really the spice is very moderate, and delightful - one reason I just love the Hatches is that they've got that perfect heat and layered flavor, but relatively very little tongue-burning "spice!" They incorporate just wonderfully with onions and garlic and fresh herbs. (They make for absolutely the best scrambled eggs ever, ohhhh my goodness.) I can't recommend The Hatch Chile Store enough! Their prices can't be beat, and the freshness really is impressive. Get 'em, and don't leave them out on the counter!”

“Being from Colorado, we grew up with Hatches green chilies. Bought fresh roasted every year. Most Florida only knows jalapeno peppers. This was the first year we found them at local produce stands. We augmented our order from New Mexico with local bought ones. There is nothing like them and it gives the chance to have a " taste of home " Thank you from a displaced Coloradian.”
