I roasted the “mild” chile and had to re-label everything. It was not mild, it was hot, everyone in my family tasted it and said “that’s not mild, its hot”. I was too upset to review it until now. The only thing that saved me and my stomach was the medium was actually “medium”. I grew up in New Mexico and went to college in Las Cruces so I know my green chile. This was very disappointing since I waited and they misplaced my order once. It seems to happen every year, they really need a better team to follow through to delivery with their customers and proper labeling.

There is no reason to order less than 25 lbs. of Fresh Hatch Chiles. For some reason, FedEx couldn't deliver my order on the day it was scheduled or the next day, so they disposed of it. The Hatch Chile Store was wonderful about sending a replacement. My order arrived this past week, and I roasted them the next day. These Chile peppers are delicious, and my family and neighbors can attest. When I roasted them on my propane grill, I added Cherry and Mesquite wood chips/chunks to add a smoky flavor - a tip I learned from Cowboy Kent Rollins. That added smoke enhances the flavor of these Chile peppers. On Monday, I used the Chile peppers in Kent's Chicken and Green Chile Chimichanga recipes. Also, The Hatch Chile Store has plenty of recipes on this website. Do yourself a favor and order 25 lbs. today. You be happy that you did! As Kent would say, "See you down the Hatch Chile Pepper Trail."

Fed Ex spoiled my first batch of fresh chilis sent to me and this company re sent me my whole order at no extra cost. I will def be ordering from them again. This was my second year in a row placing an order and they never fail to make me happy. There is nothing like the smell of fresh Hatch Chilis. Thanks Hatch

Chiles arrived in excellent condition, ready for roasting. Taste was excellent, mild just as ordered. Will be placing my order earlier next year.

25 lbs of chilis (140+ chilis) shipped Weds arrived in Maryland on Friday in excellent condition. Roasted in 7 batches of 20 chilis over lump charcoal (1 hour). Steamed bowls full (3 batches) for about 5-10 mins as grilling continued. We cut off tops so that the attached seed clump comes out to better package. We froze 14 packs for 14 batches of green chili sauce. AND THEY TASTE GREAT!

Seems like delivery was a day or 2 longer than the other shipment. I had 3 spoiled peppers and most of the peppers were curled and not straightened, which makes it a little harder to roast and not suitable for chile rellenos. Was not thrilled with this shipment. Sorry.
