“Brought these in for a kitchen science class I teach (the topic of the day was candy science, with part of the class focused on chocolate). Based on other people's responses to trying ruby chocolate, I let them know to expect something closer to white chocolate than dark chocolate, which was a great way to illustrate the effects of differences in the production process like fermentation time, roasting, and pH on both color and flavor.”

Looks fruity, but has no added fruit flavors. Unique flavor must be experienced.
Not sure how to work with it successfully yet without it losing temper, but it's color and flavor are worth the effort to get it right.
