This ruby chocolate is wonderful for making fruit flavored ganache. It sets better than white chocolate but without the overpowering taste of milk or dark chocolate. I used it to make the fillings for raspberry macarons and it was delicious.

I am a fan of ruby chocolate. I love how it tastes a little sour and how it looks. I made truffles with white chocolate ganache covered in ruby chocolate- pretty and delicious

I have just introduced RB1 to some of my customers and had a very positive response. I am researching ideas to incorporate RB1 into some chocolates.

Love this product. I made truffles with it and made a mousse with it for a triple chocolate mousse cake. I also used it in a mold, i was not as happy with it as a mold.
