You can absolutely use a larger pan on a smaller burner — the trade-off is time, not performance. Burners heat the area directly beneath the pan, and the pan then spreads that heat across its base. When the burner is smaller than the pan (which is very common with larger sizes), the centre will heat first and the edges simply take a little longer to come up to temperature.
Our wrought iron pans are highly conductive, so gentle, patient preheating makes a real difference. Starting on low heat, allowing a longer preheat, and increasing the heat gradually gives the pan time to spread heat evenly — we often say “medium is your high.” When heat is rushed, food can cook faster in the centre, which can make cooking uneven.
The 26 cm frypan is a popular choice for many home kitchens, but with a little patience and adequate preheating, the 30 cm pan will also perform exceptionally well, particularly when cooking larger meals.
