“A co-worker recommended that I try out "The Hatch Chile Store" for my next hatch chile fix. I am so glad I did. The peppers were a lot bigger then the ones you see in the store and seemed to have a more spicier pepper flavor. The box came in safe and with no damages. We did not get a chance to roast them right away about 2 days from receiving them and did not have any issues with the chiles being bruised.”

“Although we are HUGE Hatch fans, this batch was very difficult to peel after charring. We have never had much trouble, but these skins did not want to release from the peppers! I’m sure they will taste wonderful, but we ended up with much less useable chilis.”

Hi Gayle, I’m sorry to hear you had issues after roasting the chiles. What it sounds like here is that the chile flesh was burned. When the skin is properly charred, it will wrinkle and become paper like and will be easy to peel. If it is over charred and burnt the chile flesh becomes bitter, hard to peel, and inedible. It seems overall you were happy with our chiles however, the bad experience came after they were roasted. Unfortunately, this is out of our control, but we want to make sure that you are happy as a customer and we would be more than happy to set up a discount for your next fresh order so that you can give roasting them another try!
