“I ordered four 25-pound boxes of medium chiles to preserve a year's supply of green chile goodies for my family. As always, they arrived in beautiful condition and were gorgeous, meaty and fragrant chiles. I know this wasn't an ideal year for chile growers, but they were still super flavorful and delicious. In case you're curious what in the world one woman can do with 100 pounds of green chiles: I put up about 20 quarts of chicken chile verde, 20 quarts of pork green chile, I freeze dried about 15 packets of roasted green chiles and then simply froze the remainder (about 20 more packs). Beyond that, when roasting the chiles, I don't put the blackened chiles in a bag. I put them in a big pot and save that juice that collects at the bottom and I use that for either a marinade base or a canning liquid for pork or chicken. Last thing I do: (yes! There's more!) I save the chile skins and seeds to freeze dry or dehydrate, which I pulverize later and make a green chile season salt that is fantastic on french fries or even popcorn. Still haven't figured out what to do with the stems. LOL.”

“As we are transplanted New Mexicans, we always look forward to our fresh Hatch green chile! The Hatch Chile Store always sends us big, beautiful Big Jim green chiles and we order a total of 75 lbs which fills up our chile freezer and usually lasts us til the harvest next year. Our neighbors even look forward to that distinctive smell as we roast the chiles in our tabletop roaster in our driveway!”

“Beautiful chilies shipped fast in perfect condition! It took me three days to roast them all. Most went in the freezer, vacuum-sealed, then I canned a batch of roasted salsa verde. It's going to make this winter very tasty!”
