“I don't know what went wrong with my shipment. I roasted them on the grill as I always do but they totally would not blister and the skin adhered to the chiles like alligator skin. (Steaming after did not help.) The HCS was no help and just referred me to their roasting instructions page. My whole batch was no good. I went to the local market and got a bag of their Hatch chiles and they all puffed and blistered nicely using the same method. I still have no idea why that happened but do know I wasted 38 bucks on getting my chiles from the source.”

Hi Edward, Taylor Mitchell, VP of Operations here. It sounds like you didn't roast the chile on high enough heat quickly. When you don't roast the chile on a high enough heat the skin will stick to the meat. I'm afraid there isn't much we can do here as it was a problem with the roasting process, not the chile. “I roasted most of the chiles. Great flavor! I did expect a little more heat, but was not disappointed at all. Great customer service. Delivery was prompt. Chiles were in excellent condition.”
