“I’ve just made a pot of Pork Green Chile Stew! I love having packs of Hatch green chiles in my freezer. After I roast them on my charcoal grill, I clean and pack them flat on a large piece of wax paper. Then I tear squares of wax paper and use them to separate the peppers when I stack them 4-5 high. I then wrap the stack in the wax paper base, closing the ends. Next comes the Food Saver operation where I vacuum pack each stack. The flat packages are then frozen, ready to use. Here’s a photo of the stew…”

“For the past 3 years I've ordered a "care package" for my cousin and her 90+ year old Mother in central Missouri. Her Mother (my Mother's sister) was born and raised in Arizona, and is delighted to get to eat some of the dishes she grew up with prepared with FRESH chiles. My cousin reports that all 3 years they've arrived fresh, beautiful and delicious. What more can you ask for?”

“These chiles were wonderful! As a transplant to south Texas from Colorado, we searched high and low for bushels of green chiles like they sell in roadside stands in Colorado in the fall. They have never heard of such thing here! So I preordered a box of Chile from The Hatch Chile Store. It took about two months for them to arrive, but as soon as they were delivered I was so excited! I could smell them as soon as I got to my mailbox. My husband made us a small Chile roaster so we could roast them like they do in CO. We had pork green Chile the night we roasted them and I ordered another 10lb box the next day! That way we’ll have enough to last us until next harvest!”
