I don't know if it was a new person sharpening or it got started and sat down and forgotten about. I attempted to slice the paper invoice that was sent back with my "sharpened" knife and it took me about 10 tries until I caught an edge and was able to cut some of the paper. I was certainly disappointed but I suppose thats what you get for having another man sharpen your knife. D.I.Y. from here on out. The knives are cool though, just don't send them in for sharpening.

I now own 3 knives from New West Knifeworks, all bought at once,mall because the chef's knife was reviewed so positively They're all beautiful, mostly well-balanced, and they're just not sharp!! I don't mean they're dull, but that they're the sort of sharp one gets after a long period of use before sharpening again. The chefs knife required a great deal of force to dice parsnips. It didn't exactly cut a large carrot as if going through butter, more like going through a resistent sludge. IOW, they're not a good value, at least in my experience. I'm going to sharpen all of them: paring knife, utility knife, and 7 " chefs knife. Maybe I'll change my mind. I hope so. For the relative amounts being charged, these knifes should pare veggies all by themselves, rather than requiring a crew of younger sous chefs to ease the burden.

Wished this could be a good review, leather sheets were not in order when i got them. I orderd 2 of the same to give one as a present to a friend now i dont know what to do. The wood handel on both knives where draged, looks like it is a problem with quality control. The blade was sharpend ok, not great, but ok. Can“t recommend this product as i got two with the same problem.

THE KNIFE IS NOT WHAT WE HAD EXPECTED. THE BLADE HAS STAINED AND WE ARE VERY UNHAPPY WITH IT. I CALLED AND LEFT A MESSAGE ABOUT IT THE OTHER DAY AND NEVER GOT A CALL BACK... I thought, old-fashioned excellent customer service had almost disappeared but New West KnifeWorks has demonstrated in spades that it still exists! Super grateful for my three newly sharpened knives of yours, provided as a service by your company. Thank you so much!
