“What a treat it is to receive a shipment from the Hatch Chile Store! Despite being too many states away from enchanting New Mexico, we can count on this store for getting us a piece of New Mexico to flavor our best meals, quickly and so fresh. I will have to order more next year having grossly underestimated how wonderful the chile would be and how well it would ship. “Roasted my 5lb order and placed them in the freezer for use in everything I need peppers for. I’ll use some in my black beans with bacon and kielbasa tonight. Or course it will have onion and garlic too. We put this over yellow rice I make with the same onion, pepper and garlic. Your tongue will beat your brains out trying to get to the next fork full!!! I will order from you from now on and quit raising my own peppers. It’s too easy to get yours for as much as the plants cost to buy.”

“I roasted these in an air fryer and then rested in a covered bowl before peeling and seeding. I made queso dip and chicken chili with them. Great heat level for me (mild) and great flavor.”
