“Hot, or the EXTRA Hot? Balcked the skin, removed seeds and membrane. Called friend to come by for dinner, and expect to work for it. Seems like Hatch Pepper time I have tons of friends willing to help cook, and get to eat all they want. I had made my BFF salsa the night before. Made a batch of chili rellenos. I have a 24 inch cast iron skillet. Cooked them up, we ate. Cooked another batch, we ate., again. No leftovers. The rest of the 10 pounds of peppers were roasted, bagged, vacuumed, sealed, and set into 0~6℉ freezer. I am now set for the fall and winter. BFF aka BigFatFather In a few months, I'll be ordering another five pounds of each. You readers, get yours now, before the season is over.”

“My wife is fifth generation New Mexican. We lived in Colorado for 30 years and got several bushels a year at stands in Colorado and New Mexico. We live on our stocks. No more! Got a few orders here and they’re the same as what we pull out of the freezer. 100% legit. If you can’t get them fresh these are the way to go”

“The fresh chile is more fun, but the frozen and canned product is more convenient and nearly as delicious. The green chile stew reminds me of what I grew up with in northern New Mexico--and you can add a handful of diced hot chile if you like. I would fly back to NM every few months if I could, but Hatch Chile Store keeps me well nourished with this vital link to the past.”

“The only thing I have ordered over the years from The Hatch Chile Store is the fresh Hatch chiles. They always arrived fresh and ready to roast. I have not ordered their prepared items because the cost is high as is the shipping. I know these things are expensive to make but the cost does not seem worth it to me at this point. I can make my own salsas etc.”
