I recently received a hatsukokoro shinkiro gyuto 210mm and I am very pleased with it. I than noticed that after washing and drying some water kept appearing on the blade near the handle! James thought had it collected from me and he he sorted it! Amazing after sales!!!! I can wait to use it at work, I can manage just to get two weeks out of it before having to sharpening it!! Fantastic edge retention and l love to developing patina. Highly highly recommend cutting edge knives!!
