I am glad we got the same free-range goose as last Christmas. Easy to prepare extra goose fat is coming together in a vacuum pack and I used for roast potatoes. It was a very nice flavour and juicy meat. I have plenty of goose fat left after cooking goose and kept in a clean jar. Goose fat is very healthy and I going to use it to stir fry, roast, even for baking!
