This was our first order from Swaledale and not only did our Sunday roast impress, but the gravy was killer when I roasted the beef bones that made a dark, flavourful gelatinous stock. We used the pork bones to make authentic Japanese tonkotsu ramen with homemade noodles and chashuu. We will be back.
