Hi Joel, so sorry to hear that you weren't happy with your order! We do have warnings on our site that our chile is running a little on the milder side this year, and will indeed contain seeds and small bits of peel as we are not able to process by hand like usual this season. “We love this product. If I had to come up with any complaint it would be to provide smaller packaging. One pound per bag is to much for our family. By the time we got around to using a whole pound the remainder had gotten moldy.”

Hey, Todd! I'm sorry to hear you had to toss some of the product. We are so glad you love it, but hate to hear it's not portioned perfectly for you. An easy way to get around that, is to only thaw part of a bag, take what you need, and throw the rest in the freezer! Our bags are resealable, so all you have to do is put part of the bag in a bowl/sink and fill so that water only comes up part of the length of the bag (half way up, a third of the package, etc.). The portion in water will thaw faster and the portion outside will still be frozen enough to stick back in the freezer once you take out the chile you need for the time being. Hope this helps! “I have ordered the hot and extra hot green chili for a few years and it has always been great. I started with the 5lb box of green chili and roasted it myself, then tried their frozen chilis and never looked back. This year I tried the Chili Rellenos, awesome, the red chili pork tamales, really great taste and nice kick, and the green chili chicken tamales...meh, not enough green chili flavor, absolutely no chili kick. But overall, I'll be back with my preorder next year.”

“I placed an order for some green chilies and they were great! Received in good shape and taste wonderful, just the smell in the box before it was opened was wonderful! “I pre-ordered my chilis in August. By end of Sept. I was notified they would be shipped out mid Oct, but if I wasn't going to home to receive the frozen chiles I should notify them. I did so and was told the order would be shipped upon my return, Oct. 22. By Oct. 29 I still didn't get anything. I contacted them and was told they would be shipped the week of Nov. 9. Here it is Nov. 12 and still no notice of my order being shipped. I am very disappointed with the service I am receiving.”

Hi Carolyn, It looks like you have a pre-order in for our Roasted Hatch Green Chile. We are so sorry about the delay! We've never seen such a crazy year before. Unfortunately, the season was a bit later than usual this year. We always use chile grown from seed for our Roasted Hatch Green Chile as it's a bit larger and absolutely beautiful. Our most popular chile varieties, like Big Jim and Joe Parker, weren't fully mature and ready to harvest until the beginning of September which really pushed back being able to start roasting. Typically we start roasting our Hatch Green Chile in early August and roast through the first week of November. We are completely done roasting our chile as we had a freak snowstorm on October 29th. We've never seen snow in Southern New Mexico in October, just another crazy event we'll add into the roller coaster that's been 2020. On top of a delayed start and early snow, Covid-19 threw another wrench in our process. In order to protect our customers and employees, we had to completely overhaul our process and start from scratch. Because of all our new virus-related protocols and processes, we were very blessed to keep every single one of our employees healthy. We understand this did delay our roasting and shipping scheduled but it was necessary to protect everyone. On the bright side, all orders for Roasted Hatch Green Chile will ship within the next 7 business days. All pre-orders are shipped on a first-in, first-out basis. Please keep an eye on your email for a shipment notification! Thanks again, The Hatch Chile Store Team
