“I love getting hatch chilies from your farm because I know they are REALLY the ones I asked for. My husband doesn't like hot foods so when I request mild chilies I know they are always mild. If I purchase them in the store they may or may not actually be marked accurately. He made a chili roaster and makes the best roasted chilies for a dish I call Mexican Lasagna.”

“I just wanted to let you know that the mild chile arrived quickly and in good shape. We had some bad weather here in Wisconsin so I ended up roasting the pods in my oven. The curled chile will end up as strips or chopped and the flat ones are destined to be rellenos. I roasted in batches a 400 F for about 25 min per batch. Flipped the one or twice as needed. They got plunged into an ice-water bath before I peeled them. The thick skins mostly slipped off with ease. I only mangled 5 pods in the 12 lb shipment. The results are fabulous. Meaty peppers and the taste of New Mexico. I am a happy fellow. Thanks! Michael Reed”

“My order for both frozen and fresh chile was made on June 21, the money was deducted from my account on June 22. I didn't hear anything from them until I called about a month later. They said they would check on it. I finally received the frozen portion on Aug 10 the on Aug 18 I received the fresh portion. The chilies have great flavor but there was moderate spoilage. The overall experience was not what I had experienced on previous order.”

“For the Love of Hatch! I received my 50 pounds and only one Chile was soggy and thrown away. It took me two days to roast under my oven broiler. They are the quintessential chili of all chilies. I will be ordering a 25 pound of red today.”

“Ordered 8#s. Arrived in pretty good shape even though it has been terrible heat. Thanks for waiting until it cooled a bit. Loving these and sharing with friends. Great on a tortilla with a pinch of salt AND on a BLT with an egg!!! Eating one with eggs every morning”

“Received my chilies last week. Absolutely gorgeous! I roasted, peeled, seeded and froze them for future use. Tip for peeling after roasting (which I must admit came from being too lazy to do that day) - I left the roasted chilies in the ziplock I steamed them in after roasting overnight. The next day, those skins came off like MAGIC! Took a few in for a coworker who had never had them before. He and his girlfriend are now hooked, and will be ordering from you as well!”
