Prior to moving to New Mexico I always thought chilli was Tex-Mex and jalapeño hot. I discovered that not all green chillies tasted alike. Then I relocated to Las Cruces and made the real discovery that not all chillies were Hatch. I can’t tolerate the heat as much as I used to but Hatch is the best in flavor while not burning my mouth. I just purchased the Hatch Chili Relenos. I now live in SW Colorado and seek out Hatch Chilies. Glad I found you.
