I have been wanting a Japanese kitchen knife for quite a while now. I purchased a Sakai Takayuki VG10 33 Layer Hammered Damascus 170mm Santoku with American Cherry Handle. Damn, this thing is sharp and an absolute pleasure to use. This knife is a work of art and a testament to the Japanese craftsmen that make them. I cannot recommend strongly enough.
