“We were out of town when the chilies shipped and it took an extra day or sontongetbinside so we lost about 1/3 of them but the ones we saved are wonderful”

“Always enjoy getting my Hatch Chilies every year. This year was no exception. The quality of the chilies is always fantastic. However, I did learn this year that I need to just pay for the next day, I had a couple chilies with mold on them after paying for the 2-3 day shipping.”

“Received my order on time. The large Big Jim’s were perfectly ripe. There were just a few (less than a handful that were broken and gooey. But the rest were in perfect shape. They’ve been roasted and stored. Still using the last of my 21 shipment before I break into these.”

“We order fresh chile every year. As usual, the batch this season is fantastic. Shipped Tuesday, arrived in Massachusetts Thursday, roasted Friday. Absolutely perfect. Not one single chile (out of 35 lbs) had gone bad at all on transit. That is phenomenal. The Hatch Chile Store does a really fantastic job on communication during the whole process - just a great job of taking care of customers, and the chile of course! I can't think of another company of any kind that is easier to deal with. 100% satisfied and we will certainly be pre-ordering again next year. As a native New Mexican, this place is a godsend, and the whole company deserves tremendous credit for all they do!”

“We have been customers for many years, switching from the frozen chopped chiles to fresh chiles a few years ago. This year’s peppers were amazing - big, thick pods that roasted and peeled easily, especially using the ice bath method. We also appreciated a split shipment with our hot chiles arriving a week before the medium. That meant we could have the first 25lbs roasted and in the freezer on a single week night after work, and be ready for the second shipment! All around great experience, as always!”

“This is the second time I've had these chilies, but it's the first time that I've roasted and peeled my own. Even though I didn't order 2nd day delivery, they were so fresh that I only lost 12 whole or partial peppers. If you have the means to roast and peel your own, you won't be disappointed.......to the point that I'm wondering if 25lbs will be enough..... Cheers”

“Another fine shipment of fresh, medium-hot Hatch peppers. We had placed a pre-order for 25lbs and waited patiently as we went through the (frozen) last of our previous order. The shipment arrived on our front steps within 48hrs of packing and we went to work. Bought 20# of ice to maintain an ice-water bath on the patio table, rounded up the cookie tins, cleared space in the freezer and fired up the gas grill. After sorting for bug-and-breakage damage, we probably lost a handful which is typical for a large order. With a two-person small-batch operation, we blistered the peppers and dumped them in the ice bath which stops cooking and quickly loosens the skin for easy removal. For those like us who used to wrap the blistered peppers in towels and let them self-steam in plastic bags, the ice-water bath technique is much faster and prevents the pepper from getting too soft. Thanks to the unknown YouTuber who recommended this! Skinned peppers get placed on cookie sheets, put in the freezer until solid, popped off the sheets, bagged and stuck back into the freezer for future use. We are major Hatch pepper fans, so a few freshly-skinned but cold peppers quickly got wrapped in flour tortillas with swiss cheese, buzzed in the microwave and eaten with gusto! Excellent medium-hot year crop with thick meaty flesh. You just have to love the smoky smell of fresh roasting Hatch peppers, which is uncommon in Minnesota (:>).”

Hi Ty, Heat level is very subjective and varies greatly from person to person. There are instances where people feel like the Mild is far too hot or that the X-Hot has no heat. People's heat tolerance can also change over time as they eat more or less spicy foods. It looks like we upgraded your heat level and sent you another box of chile for free. “As far as the shipping company goes it took 4 days to arrive and 98% arrived perfectly. They were left at my front door without ringing the doorbell. I was tracking them so I kept checking on their arrival. This was the third year we have ordered from your company and the past two years they arrived in 2 days and had been refrigerated. Your chili’s this year were the best so far. Thank you Randi Schultz”
