“Omg! The chile rellenos were sooo delicious. I have been living in Boston for a long time now and can't get chile rellenos like back home in El Paso. Hatch, New Mexico has the best long green chiles in the world, and it's the only proper chile to make rellenos with. I cried with joy and pleasure being able to eat my comfort food again. Thank you Hatch Chile Store for filling the void in my belly and heart!”

“I did pre order and didn't get my order. I kept calling and was told that the crop hadn't come in yet.. then I was told my Big Jim sold out so I had to choose another.. to be honest I don't like the one I finally got. Definitely not big jim..”

Hi, Lore! We are so sorry about the troubles this season. Our initial harvest didn't cover all our pre-orders unfortunately. Chile aross the Hatch Valley was milder than in the past, though. We put up a warning on our website about this. Hopefully next year's crop is more up to your heat preferences! :) Thanks, The Hatch Chile Store

Hello! It makes us happy when we are able to provide a fellow New Mexico with the taste of chile, a taste that seems to be rare outside of the Southwest area. We are glad we could provide you with a taste of home! And as to pre-ordering, yes, we recommend it! We usually open up pre-orders starting around April and May for fresh green chile and for roasted chile, these orders open up around the summer time. “The chili had the NM flavor but not fresh last season taste. I could be wrong but the older the chili the darker it gets and loses peak flavor along with the bright red color. Was dark in color. Love NM hatch chili. I’m just picky. Would order again from you.”

Hello Gracie! We are sorry about the confusion surrounding your order but hopefully clarify somethings! Yes, as red chile ages, it does become darker in color but rest assured, the chile you received was from this season. So what we think happened here is it is just a crop from a different season and that is why it had a different taste. Granted, this season was a bit up and down for us so this would also explain the different taste. But still, we appreciate your support and trying out our products.
