“This was the best batch of green chiles that we have received in the past two years. They were fresh, large, clean and just plain beautiful. We roasted them, steamed they in the bag, cooled them then packaged them for the freezer. They are DELICIOUS!”

“I was excited when my Chile's arrived and out of 3 boxes 3 were bad, and roasted them the next day. I like the Big Jim because they have just the right amount of heat and have mad green Chile and it was awesome. I will buy again”

“While they are good they are not as hot as I wanted. I thought last year I got the medium heat so this year I went up a notch. Next year I will go up another notch because I obviously got the same as last year. When is the best time to place my order? I ordered early this year when I got an email you were now taking orders.”

“I Love hatch green Chile. I lived in Denver for near 40 years. Every year near Labor day we would purchase several bushels of Chile from roadside stands. I moved nearly 8 years age and knew I would miss my Chile peppers. Occasionally I can find hatch Chile in local grocers but not always. So I order the 5 pound big Jim medium peppers from the hatch Chile store. The batch arrived timely but half the order was ruined in the transport. I salvaged what I could and contacted customer service. Very quickly a new batch was sent and arrived. I appreciate the no hassle quick response.”

Hi David, It looks like this is the first time you've placed an order with us and didn't reach out to our customer service team about this issue. You did email in on 7/19 to let our customer service team know everything arrived in good shape. I took a look at the photo you posted. It looks like the chile was roasted at a low temperature for a long time. This causes the skin of the chile to cook rather than blister. Since the skin never blisters, it does not release. Typically when roasting chile, you want to roast it at a very high temperature very quickly—that way, the skin blisters and easily separates from the pod. To aid in the peeling process, we recommend placing the roasted peppers (while they are still hot) in some kind of sealed container. This allows steam to build up and makes the skin easier to peel off. I'm afraid we cannot offer you a free reshipment as the chile was in no way spoiled or damaged. What I can do is send another box if you are willing to cover the cost of shipping. We understand mistakes happen, and we all need to get our Hatch Green Chile fix :) -The Hatch Chile Store
