“After roasting them over the weekend, I tasted one and nearly fainted because it was so hot. At first, I figured it was just a fluke, as I know an occasional hotter chile can make its way into a batch. I then tried another one, this time choosing a larger, beefier chile that I expected would be more representative of a medium. Much to my dismay, it was also extremely hot, to the point that it almost made me sick. I lived in New Mexico for more than 35 years, so I'm very familiar with New Mexico green chile and the differences between mild, medium, and hot. I've also been purchasing fresh Hatch chile from The Fresh Market for years, until they recently stopped receiving shipments. What I received is far, far hotter than anything I would consider medium. I'm not sure whether my order may have been mixed up with someone else's or whether medium chile was unavailable due to the crop issues and delays you've shared this season, but these definitely are not medium heat. At this point, I'm disappointed that I didn't cancel the order when the delays and crop issues arose, particularly because I now have a batch of roasted chile that is simply too hot for me to use.”

“We have purchased chilis from Hatch now for some years. This year's shippments were no less quality than prior years. I would prefer to be able to purchase different heat levels in less than 5 lbs fresh. 10 pounds of chilis is a lot for only two people.”

“I am well pleased with the service and how you kept me informed on the shipment and delivery of my chiles. They arrived fresh and in perfect condition. My disappointment was they were a little on the mild side, at least the one's we have prepared so far. I know chiles can vary in taste, so I understand.”

“Products ordered (fresh green chile) arrived on time and in good order as described on the website and in multiple emails keeping me up to date on the progess. Quality of the peppers was excellent as was the flavor and heat levels ordered. My only complaint is the cost of the small barrel chile roaster is too expensive for the once a year investment of roasting 20-40 lbs of fresh chile. In fairness their price is the same price as can be found on Amazon and other sites.”

“We moved from Arroyo Seco, NM, last year. With no local access to roasted chiles, we decided to order from Hatch Chile Store. It was easy, notification of package status was timely and helpful, and the chiles arrived within a few days completely intact. Just had to pop them into our freezer. The only thing I miss is not being present for the roasting which smells so good :)”
