“The cost of ordering directly from Hatch is pretty expensive and my Big Jim's were all very mild. I wanted a few hot ones!”

“I received my first frozen bag of Joe Parker (medium) heat. It arrived within 24 hours of my placing an order and was very neatly peeled and packed in a styrofoam container (5 stars). The convenience of having it peeled and packed is well worth the extra cost. I used to travel to New Mexico and bring back bags of fresh chile then hire someone to roast it or spend hours roasting it on my grill. I used my first bag on the day I received it to make Green Chili Hamburgers. I ordered Joe Parker because it is said to be more consistent in heat. My first bag of Joe Parker was not medium but mild (3.5 stars). Almost no detection of heat. Not sure what I will do now!”

Please order Medium-Hot if you want a good kick." “My first order was this year was a little disappointing, I contacted support and they agreed. They sent me another batch which I first smoked with hickory chips for about 1 1/2 hour then roasted at 400%. Talk about good they are the best I've ever done. What flavor and texture. Try smoking first then roasted.”

“Our order arrived in good shape, beautiful chili peppers--the only mistake I made was assuming (never assume anything, I've been told!) that all the peppers you sold came, as the other ones I've ordered from you, already roasted and ready to put into a favorite recipe. I had no idea (again, my mistake), that you sent out "raw peppers," and so I tried "roasting," them on the grill...big mistake, they turned into leathery pieces of skin with no "flesh" and I threw them away. Live and learn, I guess. I now know that I must order roasted green chiles as I certainly have no expertise in roasting them myself. Again, my mistake...but I was very disappointed that I did not receive what I thought I was ordering; clearly next time I'll know better! Thank you, Sylvia Baldwin”

“It arrived in great shape and still frozen. I ordered medium and have only had a bit out of one bag so far, but it was really really HOT! Burned my lips - whew! I like hot things but I hope the rest are more medium heat! Thank you.”

“The chiles were good but some of the HOT ones came spoiled. We had to sort through and wash the chiles before we roasted them. A little sad but pushed through. At least not all of them went bad. (We took them out of the box the day after we received them)”

“I had a bad initial experience with The Hatch Chile Store. I THOUGHT my response was through direct email but apparently not because I was asked to update my review and was directed here. The story is - the frozen Big Jim chilies I received were pretty flavorless. Not only that but there was basically NO heat to them and I had ordered the Medium-Hot. I wrote and expressed my displeasure. Preston Mitchell wrote back telling me there had been a problem with the heat index for those particular chilies and said they had noted the same on the website. I missed it. He offered to send Hot chilies as a replacement if I would pick up the shipping. I thought it only fair to take him up on his offer and agreed. Now we’re in the warmer time of year with temps around 100°. I haven’t exactly been in the mood to prepare chili, so I don’t know what these taste like. Haha BUT, I appreciate the customer service!”

“The packaging was well done with plenty of dry ice. The packages of chile were nicely prepared, and it's great having the built-in zip locks. My only disappointment is that the medium chile has almost no heat. I would classify it as mild.”
